We'll always find a way to work shrimp into the weekly dinner menu, and shrimp tacos are one of our favorites.
Feel free to add or remove ingredients- or send us your suggestions! These are our go-to for a simple, quick, healthy option during a busy week.
-Shrimp, peeled and deveined
-salt & pepper
-red cabbage, chopped (or a bag of shredded cabbage mix)
-slaw dressing (make your own or use a vinaigrette/prepared dressing)
-thai sweet chili sauce (we love the Simple Truth brand from Kroger)
-corn or flour tortillas
-Happy Sprouts micros: radish, red cabbage, or immune boost
Thaw your shrimp (if frozen), add salt and pepper, squeeze of lime. Set aside.
Prepare your cabbage slaw or use a pre-bagged cabbage slaw. We prefer oil or vinaigrette-type dressing.
Sautee your shrimp with garlic and butter until cooked, then add to a bowl with sweet chili sauce and toss until coated
Add cabbage to your tortillas, followed by shrimp and microgreens. One of us may or may not add sour cream (there's probably a fancier option, but we leave that to the real chefs).
